Marine Dream – A Salmon + Veggies Dinner for Kids!

We have been on a food-fueled Adventure with Ollie, The Boy Who Became What He Ate and the meal we have tried today is the “Marine Dream” which you can find in Ollie’s Favorite Recipes Cookbook.

I have been so impressed with how well Mr.5 is taking to the new meals we have been making lately, from Ollie’s Favorite Recipes Book and I couldn’t wait to try one of Ollie’s dinner recipes, with salmon! We love to read the book during meal times because it helps the kids remember good eating habits, and excited to try the “Ollie meal”, as they call it. How we made the “Marine Dream” Salmon + Veggies with Pasta, from Ollie’s Favorite Recipes:

We chopped our veggies, and we sliced our salmon into three fillets.

I was really excited to try cooking with fish because my kiddos enjoyed reading the book and pointing out the fish dinner. We cooked them up and began on the rest of the dish.

Once the salmon was cooked completely, we starting boiling the bow tie pasta and cooked the veggies in the same pan as the fish was cooked in.

We also added asparagus to this recipe, because we had bought a ton of it in the last grocery run, so I decided to give it a try here. We also added the mushrooms close to the end and the flaked the salmon, once it was cooled enough to touch.

Once the pasta and veggies were done, this dish comes together fairly quickly. We didn’t have the cottage cheese, as I forgot that on the list, so we simply omitted it. (Next time, I’m curious to try it).

I tossed the bow tie pasta on top of the veggies, straight from the pot and tossed it all together, then added in the delicate and soft salmon chunks.

It’s Ready to Serve!

Mix it all, add some salt and pepper, and a bit of cheese if you need it, and enjoy!

Curious to see how Mr. 5 was going to think of this one, we placed the Ollie Book on the table, so he knew it was one of his meals and encouraged him to give it a try, with the rest of us.

He was really deep into his Handwriting Without Tears App play time, so we let him keep that up while he ate (when they want to write their letters, you do not say no). He absolutely loved it, and gobbled it all up! We got the 2 thumbs up for his approval, and I know this would not have happened without the help of Ollie!
