Do you ever have a few bananas that just don’t get eaten? Turning brown? We do often, and it’s a perfect time to make our favorite Banana Muffins! I wanted to share the recipe with you all because it is really yummy. My kids go crazy for them once they come out of the oven.
Kids Favorite Banana Muffins
Preheat Oven to 350 Degrees F.
Combine all these wet ingredients, mix until smooth:
4-5 Ripe Bananas, mashed
3/4 Cup Brown Sugar
1/2 cup Melted Butter
1 tsp Vanilla
3/4 Cup Milk
In another bowl, blend or sift these dry ingredients:
2 Cups All Purpose Flour
1 tsp Baking Soda
1 tsp Baking
1/4 tsp Salt
1 tsp of Cinnamon
1/4 tsp of All Spice
Combine dry with the wet ingredients, and then pour into prepared muffin tins.
Bake for 18-25 minutes, or until done.
I like to prepare my tins with butter and flour and this trick works great! they pop out easily and the kids don’t have to worry about peeling off the liners, and I don’t have to worry about them being dropped on the floor.
I use the time for baking as suggested, but the trick I use to make sure they are ready is the bounce back trick.
Check the muffins by touching the top and if it leaves a dent, it is not done. Once the tops BOUNCE back up, they are done. 🙂
